Fish curry/meen kulambu

Fish is packed with protein,nutrients. Meen kulambu/fish curry is 

one of the most delicious south Indian curry cooked  finding a 

balance between tamarind sourness and spice from the chili to 

make the fish the star of the dish.Here i have used sea 

bass(koduva) from whole food.This curry can be done with fish of 

your preference.

Ingredients:

  • Fish 1/2 kg
  • tamarind lemon size
  • chili powder - 1 tbsp
  • coriander powder 1.5tbsp
  • garlic pods
  • ginger garlic crushed
  • salt to taste
  • oil --3tbsp
  • one small onion diced
  • tomatoes 2 diced
  • curry leaves
  • coriander leaves to garnish
  • lemon juice 2 tsp
  • turmeric powder 1/4 tsp
  • mustard 1/2 tsp
  • fenugreek seeds 1/4 tsp
  • red chilli    3 nos
  • pepper powder 1 tbsp
Method:

  • Wash and clean the fish
  • marinate the fish lemon juice ,salt and turmeric powder and set aside
  • In a pan add oil ,one the oil is hot add mustard seeds
  • once the mustard seeds splutter add fenugreek seeds 
  • add diced onions and tomatoes
  • fry till onion is translucent and tomato is mushy
  • add red chilli and curry leave and saute for a minute
  • now add garlic pods and then crushed ginger garlic 
  • saute for 5 minutes then add the spice powders
  • chili powder,coriander powder,turmeric powder and salt to taste
  • add half cup water to make sure masalas doesn't burn
  • add the tamarind water and allow the curry to boil
  • add pepper powder and reduce the flame to medium
  • once raw smell is gone add fishes to the curry
  • Donot crowd the fish and close it with lid and turn to low flame
  • fish will get done in 5 to 8 minutes
  • finally garnish with coriander leaves
  • serve hot

    Ghee Mysore pak

    Ghee Mysore pak is an Indian dessert which is soft and melts in your mouth consistency sweet.It's made from besan flour,ghee and sugar.This sweet is one of our top list of sweets for any celebration and occasion. Ingredients:  1 cup besan flour 2 cups sugar 1 cup water 2 cups ghee Method: measure a cup of besan flour  sift the besan flour and add to a bowl measure sugar in the same cup  add 2 cups of sugar to a pan adding one cup of water  heat the pan to make the sugar syrup in another pan add 2 cups of ghee  heat the ghee but don't boil it in medium flame add the hot ghee to the besan flour and  make a batter without any lumps when the sugar dissolves and the syrup starts to boil add the besan mixture little by little to the sugar syrup keep stirring the mixture to avoid lumps on medium to low flame add hot ghee to the pan in intervals and keep stirring till the besan mixture doesn't stick to the pan anymore and the ghee oozes out ...

    Instant Tomato pickle

    Tomato pickle is a spicy dish made out of tomatoes.This will serve  as a great side dish for idly,dosa,chappathi,curd rice.Tomato pickles can be stored atleast for 10 days with refrigeration.    prep time :10 minutes cooking time:60 minutes Ingredients: Tomato 1 kg oil        -1/4 cup and 2 tbsp oil   mustard  1 tsp red chili powder 1.5 tsp asafoetida 1/2 tsp fenugreek seeds 1/4 tsp salt to taste Method: choose ripe and less sour tomatoes wash and add to the mixer grind the tomato completely heat a pan and add oil  when the oil is hot add mustard seeds & fenugreek seeds when mustard seeds splutter add fenugreek seeds  turn brown pour the tomato mixture into the pan now add asafoetida  tomato mixture will start to boil with the water in it in medium flame allow the tomato to boil till the raw smell is gone keep the pan closed with a lid as tomato will splash a lot with water in it ...
