Cooking Basics

Hello Friends  !


       I'am gonna talk about the basics which will make cooking, an easy process. My learning over years of cooking is that when we do the basics properly,cooking can become a cake-walk.So first thing first.A clean kitchen is the key to our own heart to invite ourselves into the kitchen.what we mean by a clean kitchen? we are talking about the basics.

Every day task to be done.
  • keeping the gas stove clean.
  • keeping the sink clean. 
  • keeping the counter-top clean.
  • sweeping the floors everyday.
  • put away extra food.
  • throw the trash everyday.
  • wipe outside of the appliances.
          
   A Clean kitchen(House) in the morning is the first step in having a Great day !

Next is the weekly task:
  • wipe your cabinets.
  • clean the refrigerator.
  • plan the weekly menu(will talk in-detail in my next blog)
  • prep works for the weekly cooking.
  • mopping the kitchen.
  • clean inside the microwave.
  • replace kitchen towels.
Monthly
  • Inventory of the pantry ,throwing away the expired items
  • inventory of the freezer.
  • clean the refrigerator,wipe down drawers and shelves
  • clean the oven.
  • sort through and organise cooking utensils ,toss ones that are too old.



Tips to shop like a pro
  • Always check the pantry before heading to the grocery store.
  • During the week make a list of items which you need for the coming week.
  • A proper list saves time and also saves money from grabbing unwanted items from the aisle.
  • Deciding the portion size of the food to cook will help us to avoid buying excess and later throwing in the trash.
  • Do not forget to buy seasonal fruits and veggies as we get to enjoy them only in the season.
  • a planned menu for the week will help us from repeating the same menu.

Sambar rice/Bisibelebath

Bisibelebath means hot lentil rice. Bisibelebath is a flavourful tasty rice made from rice,toordhal and home-made spice blend.It's always served hot.Here, i have made my version of this rice and its a great lunch recipe. Ingredients: spice powder: red chili 7 nos coriander seeds 2 tbsp channa dhal 1 tsp urad dhal 1tsp cumin seeds 1 tsp pepper 3/4 tsp methi seeds 1/4 tsp coconut 4 tbsp cinnamon -1/2 inch ( can also be added if you prefer the taste) cloves  2  nos ( can also be added if you prefer the taste) For the rice: Rice 1.5 cup toor dhal 3/4 cup to 1cup   onion 1 medium size tomato 1medium size curry leaves 1 string turmeric powder 1/4 tsp asafoetida 1/4 tsp mustard seeds 1 tsp oil or ghee as required salt to taste  tamarind  water from 1/2 lemon size tamarind Method: dry roast or add a tsp of oil and roast the spice powder ingredients grind to make the bisibelebath powder In a pressure cooker  or instant pot add oil or ghee add mustar

chili mushroom

Chili mushroom is an indo-chinese starter popularly eaten in restaurant.This can easily be prepared at home following these simple steps. Ingredients:    For the batter: oil Maida cornflour chilipowder gingergarlic paste pepper powder salt as needed For the chili mushroom: Mushroom chili sauce soy sauce ketchup onion  bell pepper sugar greenchilli crushed ginger garlic pepper powder salt as needed cornflour water Method: In a bowl add 1/2 cup of maida,1/4 cup of cornflour, 1/2 tsp of chili powder,1/2 tsp of pepper powder,salt as needed  make a batter adding 1/2 cup of water coat the mushrooms in the batter Heat oil in a pan and fry the mushroom  Heat another pan with 2 tbsp of oil add crushed gingergarlic and  two slit green chili add the onion and bell pepper saute for a minute now add 2 tbsp of tomato sauce,1tsp of chili sauce,1tsp of soy sauce add 1 tsp of sugar salt as  per taste saute for 2 minutes mix 2tbsp of cornflour in 4 tbs

Paneer butter masala

Paneer butter masala in 10 minutes is the best side dish for fried rice ,chappathi.Making a restaurant style paneer butter masala  at home will help us in impressing not just our family members  but its a great dish for potluck.So how we prepare this paneer butter masala in 10 minutes Ingredients: paneer 250 grams onion 2 medium size tomato 3 large cashew nut  10  oil  salt  kasturi methi 1/2 tsp butter 2 tbsp fresh cream  red chili powder 1 tsp garam masala powder 3/4 tsp bay leaf  1 Method:  In  a pan add oil or butter saute onions,tomatoes and cashew nuts let it cool and grind to a smooth paste add butter to the pan add bay leaf and chili powder now pour the paste into the pan allow to boil for 5 minutes  add garammasala and kasturi methi then add the paneer and simmer it to low flame finish with corriander leaves watch the video of making of paneer butter masala
